MERRY MULLED WINE

  • 2 bottle of full red wine

  • 3 clementines

  • 1 lemon 

  • 1 lime

  • 150g brown sugar

  • 50g honey

  • 4 cloves

  • 1 star anise

  • 1 cinnamon stick

  • 1 small piece of rosemary

  • 1 bay leaf

  • 1 vanilla pod

Cut the the clementine’s, lemon and lime on half and squeeze the juice.

Put the sugar in a large saucepan over a medium heat and add the fruit over the sugar & honey.

Add the cloves, cinnamon stick, star anise, rosemary and bay leaves. Split the vanilla pod lengthways and add to the pan, then stir in just enough of the red wine to cover the sugar. 

Simmer until the sugar has completely dissolved then bring to the boil. Keep on a rolling boil for about 4 to 5 minutes until you’ve got a good thick syrup. 

Now turn down the heat down to low and the rest of the wine. Gently heat the wine and after around 5 minutes, when it’s warm have a quick taste then ladle it into heatproof glasses and serve warm.
