THE SAZERAC

serves 1
1 white sugar cube
1 teaspoon cold sparkling water
2 dashes Peychauds bitters
2 dashes Angostura bitters
35 ml rye whiskey
35ml cognac
1-2 ice cubes
Absinthe to rinse
Lemon zest, to garnish
2 chilled rocks glasses
Rinse the chilled rocks glass with the absinthe
In the missing glass muddle the sugar with the water and both bitters.
Add the whiskey & cognac with the ice and stir until well chilled, they strain into the glasses.
Rub the rim of the glass with the lemon peel to get the oils out then garnish with the lemon peel.
