WATERMELON, FETA
& OLIVE SALAD

I discovered this one whilst travelling across the Greek Islands when filming Feast Greece, it’s so refreshing and great at a BBQ.

 

Ingredients

  • ½ watermelon, peeled & diced ½“

  • 250g Persian feta ½“ dice or crumbled

  • 24 black pitted olives

  • 10 leaves fresh mint, thinly sliced

  • 4 sprigs oregano, picked leaves

  • 2 limes juiced & zested

  • 50ml extra virgin olive oil

  • Sea salt & freshly ground black pepper

 

Instructions

Place the diced watermelon in a bowl and carefully break up the Persian feta, add the olives and the mix in the herbs, lime juice & zest with the olive oil.

Season well and serve straight away.
