WATERMELON, FETA
& OLIVE SALAD
I discovered this one whilst travelling across the Greek Islands when filming Feast Greece, it’s so refreshing and great at a BBQ.
Ingredients
½ watermelon, peeled & diced ½“
250g Persian feta ½“ dice or crumbled
24 black pitted olives
10 leaves fresh mint, thinly sliced
4 sprigs oregano, picked leaves
2 limes juiced & zested
50ml extra virgin olive oil
Sea salt & freshly ground black pepper
Instructions
Place the diced watermelon in a bowl and carefully break up the Persian feta, add the olives and the mix in the herbs, lime juice & zest with the olive oil.
Season well and serve straight away.
